Ingredients

Beef and Oil

  • 2 tablespoons olive oil
  • 2 pounds sirloin tips or beef stew meat cut into 1-inch pieces

Vegetables and Flavorings

  • 1 large onion diced
  • 3 cloves garlic minced
  • 3 tablespoons tomato paste

Liquids and Seasonings

  • 2 cups beef broth or beef stock
  • ¼ cup Worcestershire sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon dried rosemary
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Thickening Agent

  • 3 tablespoons cornstarch
  • 3 tablespoons cold water

Garnish

  • Fresh parsley chopped (for garnish)

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat. Add the beef cubes and sear until browned on all sides, about 3-5 minutes. Work in batches if needed to avoid overcrowding. Transfer the seared beef to the slow cooker.
  2. In the same skillet, add the diced onion and cook until softened, about 3 minutes. Add the minced garlic and cook for another 1-2 minutes. Stir in the tomato paste and cook for 2 minutes to deepen the flavor.
  3. Pour in the beef broth and Worcestershire sauce. Add dried oregano, dried rosemary, paprika, salt, and black pepper. Stir well to combine all ingredients.
  4. Transfer the onion mixture to the slow cooker if it’s not already there. Close the lid and cook on low for 8 hours (or on high for 5 hours) until the beef is very tender.
  5. About 30 minutes before serving, whisk together the cornstarch and cold water in a small bowl until smooth.
  6. Stir the cornstarch slurry into the slow cooker. Cover and cook on high for an additional 30 minutes, allowing the gravy to thicken to a rich consistency.
  7. Garnish with chopped fresh parsley. Serve the beef tips and gravy over mashed potatoes, rice, or egg noodles for a hearty meal.

Notes

  • Searing the beef adds depth of flavor but can be skipped to save time.
  • For quicker prep, whisk the gravy ingredients together and pour over beef, adding cornstarch later to thicken.
  • Add chopped carrots, mushrooms, or bell peppers to the slow cooker for extra vegetables and enhanced flavor.
  • Substitute half the beef broth with dry red wine for a richer gravy.
  • Use stew meat, sirloin tips, or any sturdy cut of beef suitable for slow cooking.
