- 1/2 cup white onion finely chopped
- 1/2 cup green pepper finely chopped
- 1/8 cup water
- 1 ounce taco seasoning mix (1 packet)
Beans and Chips
- 15 ounces black beans, rinsed and drained, heated
- 11 ounces tortilla chips (3/4 of a bag)
Cheese and Toppings
- 3 cups cheddar cheese freshly shredded
- 1 cup cherry tomatoes diced
- 1/4 cup black olives sliced
- 1/4 cup cilantro finely chopped
- 2 jalapeños sliced
- 2 to 3 green onions sliced
Optional Toppings
- 1 cup sour cream
- 1 cup salsa
Instructions
- Preheat Oven: Preheat your oven to 350 degrees Fahrenheit to prepare for baking the nachos.
- Cook Beef and Veggies: In a large skillet over medium-high heat, add the ground beef, finely chopped white onion, and green bell pepper. Cook for 5 to 8 minutes or until the beef is fully cooked and juices run clear, stirring occasionally.
- Add Seasoning and Beans: Stir in ⅛ cup water and the taco seasoning mix into the skillet. Cook and stir for 2 to 3 minutes until well combined. Then add the rinsed and heated black beans, mixing everything thoroughly. Remove the skillet from heat and set aside.
- Layer Nachos: In a 9x13 inch baking dish or baking sheet, spread half of the tortilla chips evenly. Top with half of the beef and bean mixture, followed by half of the shredded cheddar cheese. Repeat the layering with the remaining chips, beef mixture, and cheese.
- Bake: Place the assembled nachos in the preheated oven and bake for 7 minutes or until the cheese is perfectly melted and bubbly.
- Add Fresh Toppings and Serve: Remove the nachos from the oven and immediately top with diced cherry tomatoes, sliced black olives, chopped cilantro, jalapeño slices, and green onions. Serve hot with optional dollops of sour cream and salsa.
Notes
- Use 97% lean ground beef to reduce excess fat and keep the nachos less greasy.
- For a vegetarian version, substitute ground beef with extra black beans or a plant-based meat alternative.
- Adjust jalapeño quantity for your preferred spice level or remove for milder flavor.
- Warm the black beans before adding to the beef mixture to ensure even cooking and better flavor blending.
- To make cleaning easier, line your baking dish with parchment paper before layering the nachos.
