Cajun Chicken:

  • 1 large egg
  • 1 cup panko bread crumbs

  • 1/2 teaspoon garlic powder
  • 3 tablespoons canola oil, or vegetable oil

Cheesy Grits:

  • 2 cups whole milk
  • 2 cups chicken broth
  • 1/2 teaspoon salt
  • 1 cup stone ground grits, not instant
  • 1/2 teaspoon pepper
  • 1/4 cup unsalted butter
  • 4 ounces sharp cheddar cheese, shredded
  • hot sauce, to taste

Instructions

  1. Cajun Chicken

    Carefully slice chicken breasts in half lengthwise to create four thin pieces. Pat chicken dry and season with salt and pepper. Whisk egg in a shallow bowl. In another bowl, combine bread crumbs, Cajun seasoning, and garlic powder. Coat chicken in egg, then breading mixture. Fry in oil until golden brown.

  2. Cheesy Grits

    In a pot, bring milk and chicken broth to a simmer. Stir in grits, salt, and pepper. Cook until thickened. Remove from heat and stir in butter and cheddar cheese until melted. Serve with hot sauce.
