Chicken:

  • 1 1/2 lb chicken thighs, boneless and skinless

Cream Sauce:

  • 1 cup heavy cream
  • 1 cup parmesan cheese, grated
  • 1/2 cup sun-dried tomatoes, sliced (packed in oil)
  • 1/2 cup chicken stock
  • 4 cloves garlic, minced
  • 3 tbsp unsalted butter
  • 1 tbsp oil from jar of sun-dried tomatoes
  • 2 tsp dried parsley
  • 1/2 tsp dried basil
  • 1/2 tsp salt
  • 1/4 tsp dried oregano
  • 1/4 tsp ground pepper

Additional:

  • 3 oz baby spinach

Instructions

  1. Cream Sauce: In a saucepan over medium heat, sauté butter, sun-dried tomato oil, and garlic. Add chicken stock and heavy cream, simmer until thickened. Stir in parmesan cheese and continue simmering.
  2. Chicken: Place chicken in slow cooker, season with basil, oregano, parsley, salt, and pepper. Add sun-dried tomatoes, pour sauce over chicken, and cook on high for 3 hours or low for 6 hours.
  3. Remove chicken, stir in spinach until wilted. Serve chicken with sauce poured over the top.

Notes

  • This dish pairs well with crusty bread or over pasta.
  • For a thicker sauce, mix a slurry of cornstarch and water and stir into the sauce before serving.
