Lentil Soup:

  • 1 16ounce package dried lentils
  • 1 cup diced sweet onion
  • 4 carrots, chopped
  • 4 celery stalks, chopped
  • 2 garlic cloves, minced
  • 2 sprigs fresh thyme
  • 1/4 cup tomato paste
  • 1 teaspoon ground cumin
  • 1 bay leaf
  • 7 cups vegetable or chicken stock
  • 3/4 cup full-fat canned coconut milk
  • 1 teaspoon coarse salt
  • Black pepper, to taste

Instructions

  1. Slow cook your soup: Stir all ingredients until well combined in the slow cooker. Cover and cook on low for 8-10 hours or on high for 4-6 hours. Remove and discard the bay leaf and thyme stems.
