  • 1/2 cup chicken bone broth

  • 1/2 cup shredded Tex-Mex cheese blend
  • 1 Tbsp olive or avocado oil
  • Fresh cilantro, chopped to taste
  • Fresh lime slices, to garnish
  • Optional: thinly sliced scallions, to garnish

Instructions

  1. Preheat Oven: Preheat your oven to 400 degrees Fahrenheit to prepare for melting the cheese at the end of cooking.
  2. Season Chicken: Sprinkle the chicken breasts evenly with garlic powder, chili powder, sea salt, and freshly ground black pepper. Rub the seasonings into the chicken on all sides to ensure good flavor penetration.
  3. Sear Chicken: Heat the olive or avocado oil in an oven-proof skillet over medium heat. Once hot, carefully place the seasoned chicken breasts in the skillet. Sear each side until golden brown, approximately 3 minutes per side, to lock in juices and build flavor.
  4. Remove Chicken: After searing, transfer the browned chicken breasts to a plate temporarily while preparing the sauce in the same skillet.
  5. Prepare Sauce: Pour the chicken bone broth into the skillet and use a spatula to scrape up any browned bits from the bottom. Add the salsa verde and cook over medium heat, bringing the mixture to a gentle simmer.
  6. Simmer Chicken in Sauce: Return the chicken breasts to the skillet, nestling them into the simmering salsa verde sauce. Let them cook gently until the chicken is cooked through (internal temperature of 165°F) and the sauce has reduced by at least half, thickening nicely. Occasionally spoon the hot sauce over the chicken to keep it moist and flavorful.
  7. Add Cheese and Bake: Once the sauce is thickened and chicken cooked, remove the skillet from heat. Sprinkle shredded Tex-Mex cheese evenly over each chicken breast. Transfer the skillet to the preheated oven and bake for 3-4 minutes, or just until the cheese is melted and bubbly.
