Pizza Dough

Pumpkin Topping

  • 1 cup pumpkin, diced
  • 1 tbsp olive oil
  • 1 tsp brown sugar

Caramelized Onion

  • 1 tbsp butter
  • 1 red onion, chopped
  • 1/2 cup apple cider
  • Salt and pepper, to taste

Other Toppings

  • 1 cup tomato sauce
  • 2 cups mozzarella cheese
  • 1/3 cup cooked bacon, chopped
  • 1/4 cup blue cheese, crumbled

Instructions

  1. Roast Pumpkin: Preheat the oven to 350°F (175°C). Place the cubed pumpkin in a baking pan. Drizzle with olive oil, sprinkle with brown sugar, and season with salt and pepper. Roast the pumpkin for 15 minutes until tender and caramelized.
  2. Caramelize Onion: While the pumpkin roasts, melt butter in a saucepan over medium heat. Add the chopped red onion and cook until translucent, about 8 minutes. Add apple cider, salt, and pepper, and continue cooking until the cider is mostly reduced, intensifying the flavor of the onions.
  3. Preheat Oven for Pizza: Increase oven temperature to 425°F (220°C) to prepare for baking the pizza.
  4. Assemble Pizza: Roll out the pizza dough on a floured surface to desired thickness. Spread tomato sauce evenly over the dough. Sprinkle mozzarella cheese and cooked bacon on top. Layer with caramelized onion and roasted pumpkin. Finish by sprinkling crumbled blue cheese over the pizza.
  5. Bake Pizza: Place the assembled pizza in the preheated 425°F oven. Bake for 20 minutes or until the crust is golden and the cheese is melted and bubbly.
