Chow Mein Noodles:
- 1 lb fresh chow mein noodles
Vegetables:
- 2 cups thinly sliced cabbage
- 1 cup sliced celery
- 1 small onion, sliced
Noodle Sauce:
- 2 tbsp regular soy sauce
- 1/2 tbsp dark soy sauce
- 2 tbsp oyster sauce or vegetarian stir fry sauce
- 1 tbsp sesame oil
- 2 cloves garlic, minced
- 1/4 cup low-sodium chicken stock or cold water
- 1/2 tbsp cornstarch or potato starch
- Noodle Sauce: In a small bowl, combine all noodle sauce ingredients and set aside.
- Prepare Noodles: Boil chow mein noodles for 20-30 seconds, then strain and set aside.
- Cook Vegetables: Heat oil in a pan, sauté onions, cabbage, and celery until softened.
- Add Noodles: Push veggies aside, add more oil, then noodles and sauce. Toss until coated.
