  • 8 round spring roll wrappers
  • 1 1/2 cups leftover cooked turkey shredded
  • 8 medium leaves butter leaf lettuce (red or green)
  • 1 medium carrot cut into thin strips or shredded
  • 1 small cucumber cut into thin strips
  • 1 1/4 cup bean sprouts washed and dried
  • 1/2 cup fresh mint leaves washed and dried
  • Dipping sauce of your choice

Instructions

  1. Prepare Vegetables: Wash and dry the bean sprouts, mint leaves, and lettuce leaves thoroughly. Cut the carrot and cucumber into very thin strips or matchsticks and set them near a clean, flat workspace.
  2. Shred Turkey: Shred or tear the leftover turkey into small, bite-sized pieces suitable for filling.
  3. Soften Wrappers: Fill a large bowl with warm water. Dip one spring roll wrapper into the warm water, submerging it fully for a few seconds on each side until it softens and becomes pliable. Lay it flat on a clean work surface.
  4. Assemble Rolls: Place one butter leaf lettuce in the upper third of the softened wrapper. On top of the lettuce, add a small amount of shredded turkey, followed by a few strips of carrot, cucumber, and bean sprouts. Finish by placing a few mint leaves on top of the filling.
  5. Fold and Roll: Fold the top portion of the wrapper over the filling, then fold in the sides to seal the ends tightly. Roll the wrapper toward you firmly, keeping the filling snug inside. Allow the rice paper to adhere and seal the roll completely.
  6. Slice and Serve: If desired, use a serrated knife to slice each spring roll in half crosswise. Serve immediately with your favorite dipping sauce for a fresh and tasty appetizer or light meal.
