4 large wheat tortillas (10-12 inches)

Instructions
Prepare Turkey Mixture: In a medium bowl, mix the shredded turkey with the taco seasoning or dry rub if using, ensuring the meat is evenly coated with the seasoning.
Assemble Quesadilla: Heat a large skillet over medium heat. Place one tortilla flat in the skillet. On one half of the tortilla, evenly layer 1/2 cup of the seasoned turkey, just under 1/2 cup of drained black beans, and 1/2 cup of shredded cheese.
Cook Quesadilla: Carefully fold the tortilla over the filling to create a half-moon shape. Cook for 3-5 minutes on one side until the bottom is golden and the cheese begins to melt.
Flip and Finish Cooking: Using a large spatula, carefully flip the quesadilla over and cook for another 3-5 minutes until the second side is golden and cheese is fully melted.
Repeat: Repeat the assembly and cooking process with the remaining tortillas and fillings.
Serve: Slice each quesadilla into 3 pieces and serve warm with sour cream, guacamole, or salsa.
