Ingredients

  • 6 chicken thighs, bone-in, skin-on

  • 1 tablespoon olive or vegetable oil

  • Salt and pepper, to taste

  • 1/2 cup water

  • 2 cloves garlic, minced

  • 1/4 cup honey

  • 2 tablespoons Dijon mustard

  • 3 tablespoons stone ground/whole grain mustard

  • 1 pound (450g) baby potatoes, halved

  • 3 carrots, peeled and sliced into 1-2 inch pieces

Instructions

  1. Brown Chicken: Select the SAUTE setting, heat oil, season and brown chicken thighs, skin side down.
  2. Deglaze: Add water to deglaze the pot, scraping any browned bits. Turn off the saute setting.
  3. Prepare Sauce: Add garlic, honey, both mustards, potatoes, and carrots. Season with salt and pepper.
  4. Pressure Cook: Close lid, set to MANUAL/PRESSURE COOK on high for 8 minutes.
  5. Release Pressure: Quick release steam, carefully open the lid.
  6. Serve: Garnish with parsley and enjoy!

Notes

  • For a thicker sauce, you can remove the chicken and veggies after cooking and reduce the sauce using the SAUTE function.
  • Adjust honey and mustard to suit your taste preferences.
