Ingredients

Units Scale

Beef

  • 2 pounds boneless beef top round roast, thinly sliced
  • 1/2 cup reduced-sodium beef broth
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 8 onion hamburger buns, buttered and toasted

Cheese Sauce

  • 1/4 cup unsalted butter
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 1 tablespoon hot sauce
  • 1/2 teaspoon salt
  • 3 cups grated cheddar cheese

Instructions

  1. Prepare the beef: In the pressure cooking pot of your Instant Pot, combine the thinly sliced beef, beef broth, garlic powder, salt, and freshly ground black pepper. Lock the lid in place to ensure a proper seal.
  2. Pressure cook the beef: Select the High Pressure setting and set the cooking time to 10 minutes. Once the cooking cycle finishes, allow the pressure to release naturally for 10 minutes to keep the beef tender, then perform a quick release to release any remaining pressure. Carefully remove the lid when the valve drops.
  3. Make the cheese sauce: While the beef cooks, melt the unsalted butter in a medium-sized saucepan over medium heat. Sprinkle in the flour and stir continuously until the mixture bubbles and turns golden, forming a roux. Gradually whisk in the milk a little at a time until the sauce is smooth and thickened. Stir in hot sauce and salt for flavor. Add the grated cheddar cheese in batches, stirring until melted and smooth. Remove from heat once fully combined.
  4. Toast the buns: Butter the onion hamburger buns and toast them until golden and crisp, either in a skillet or toaster.
  5. Assemble and serve: Place the cooked beef generously on each toasted bun, then ladle the warm cheddar cheese sauce over the top. Serve immediately for a delicious and hearty meal.

Notes

  • For best results, slice the beef thinly across the grain to ensure tenderness.
  • Reduced-sodium beef broth is used to control the saltiness; adjust seasoning accordingly.
  • Use your favorite brand of hot sauce to customize the heat level in the cheese sauce.
  • If you prefer a thicker cheese sauce, simmer it a little longer after adding the cheese, stirring constantly.
  • To save time, you can prepare the cheese sauce while the beef is pressure cooking.
