  • 1/2 cup rice vinegar or white wine vinegar
  • 1/2 cup water
  • 1 cup white sugar
  • 1 Tablespoon garlic, minced
  • 1 Tablespoon light soy sauce or coconut aminos (for Gluten-Free version)
  • 4 teaspoons red chili flakes or red pepper flakes
  • Corn-starch Slurry:

  • 3 teaspoons cornstarch
  • 2 Tablespoons water

Instructions

  1. Prepare Corn-starch Slurry: Whisk together cornstarch and water to form a slurry. Set aside.
  2. Toast Red Pepper Flakes: In a medium saucepan over medium heat, toast red pepper flakes for about 3 minutes to enhance flavors.
  3. Cook the Sauce: Add vinegar, water, sugar, minced garlic, and soy sauce to the saucepan. Bring to a boil. Cook for 4 minutes, stirring occasionally.
  4. Add Cornstarch Slurry: Reduce heat to low. Slowly add the cornstarch slurry to the sauce, whisking until fully incorporated.
  5. Cool and Store: Remove the pan from heat. The sauce will thicken as it cools. Allow it to cool to room temperature before storing.
