Ingredients

Units Scale

Macaroni Salad

  • 8 oz dry macaroni noodles
  • 1/2 cup finely diced sweet gherkins
  • 3/4 cup finely diced red bell pepper
  • 1/3 cup thinly sliced celery
  • 1/3 cup finely diced red onion
  • 2 large hard-boiled eggs, finely diced

Dressing

  • 3/4 cup mayonnaise
  • 1/4 cup sour cream
  • 2 Tbsp sweet pickle juice
  • 1 Tbsp red wine vinegar
  • 1 Tbsp sugar
  • 2 tsp Dijon mustard
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/8 tsp garlic powder
  • 1/8 tsp crushed red pepper

Instructions

  1. Cook Macaroni: Bring a large pot of salted water to a boil. Add the macaroni noodles and cook until al dente, about 8-10 minutes. Drain and rinse thoroughly under cold water to stop the cooking process and cool the noodles. Toss with a small amount of olive oil to prevent sticking.
  2. Prepare Vegetables and Eggs: In a large mixing bowl, combine the finely diced sweet gherkins, red bell pepper, thinly sliced celery, diced red onion, and finely diced hard-boiled eggs. Mix gently to distribute the ingredients evenly.
  3. Make Dressing: In a separate bowl, whisk together the mayonnaise, sour cream, sweet pickle juice, red wine vinegar, sugar, Dijon mustard, salt, black pepper, garlic powder, and crushed red pepper until smooth and well blended.
  4. Combine Salad: Pour the dressing over the macaroni and vegetable mixture. Toss gently but thoroughly to coat all ingredients evenly with the dressing.
  5. Chill and Serve: Cover the salad with plastic wrap and refrigerate for at least 1 hour to allow flavors to meld. Before serving, stir gently and adjust seasoning or add more dressing if desired.

Notes

  • Use whole-grain or gluten-free pasta for a healthier or gluten-free alternative.
  • For extra freshness, garnish with chopped fresh herbs like parsley or chives before serving.
  • Make sure to rinse pasta well after cooking to ensure the salad is not mushy and the dressing clings properly.
  • This salad can be prepared a day in advance and stored in the refrigerator.
  • Adjust the amount of crushed red pepper to control the spiciness.
