For the Sandwich:

  • 1 tablespoon olive oil
  • 113 g spinach leaves
  • 1 pinch salt
  • 4 slices sourdough bread
  • 2 tablespoons butter, softened at room temperature
  • 68 pieces sun-dried tomatoes, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup cheddar cheese, grated (or grated mozzarella cheese)
  • 1 pinch oregano
  • 1 pinch red pepper flakes
  • 1 teaspoon honey (optional for serving)

Instructions

  1. Sauté the Spinach: Heat olive oil in a non-stick pan. Add spinach and sauté until wilted. Season with salt, then transfer to a plate.
  2. Prepare the Sandwich: Butter one side of each bread slice. Place two slices butter side down in the pan. Top with sun-dried tomatoes, feta, cheddar, and spinach. Add remaining feta and cheddar, then sprinkle with oregano and chili flakes.
  3. Cook the Sandwich: Place the remaining bread slices on top, butter side up. Cook over medium heat until golden on both sides and cheese is melted.
  4. Finish and Serve: Sprinkle with herbs and chili flakes. Optionally drizzle with honey before serving.
