Instructions

Fold the omelet into thirds and then fold the top and bottom toward the center to create a square. Remove and repeat with remaining egg mixture to make 4 omelet squares.
  3. Prepare the Pancakes: In a large bowl, mix flour, milk, melted butter, egg, baking powder, maple syrup, and salt until smooth. Coat a skillet with butter and cook 3 tablespoons of batter per pancake for about 2 minutes on the first side until bubbles form, then flip and cook another minute until golden brown. Make 8 pancakes in total and set aside.
  4. Assemble the McGriddles: Place one pancake on a plate, layer with a slice of cheese, then a sausage patty, followed by an egg omelet square, and crispy bacon if using. Top with another pancake. Repeat for all 4 sandwiches. Customize with extra toppings like avocado or hot sauce if desired.
