Units Scale

Salad Ingredients

  • 1 can chickpeas (garbanzo beans), 15 oz, rinsed and drained
  • 1 cup cherry tomatoes, halved or quartered (about 15 tomatoes)
  • 4 Persian cucumbers, diced (or 1 English cucumber)
  • 1/4 cup red onion, diced (about a quarter of an onion)
  • 1/4 cup fresh parsley, chopped (more to taste)
  • 2 tablespoon fresh dill, chopped (more to taste)
  • 1/2 cup crumbled feta cheese (4 oz or half a block)

Dressing Ingredients

  • 1 tablespoon extra virgin olive oil
  • 2 tablespoon white wine vinegar (or apple cider vinegar)
  • Juice of 1 lemon (about 2-3 tablespoons)
  • 1/2 teaspoon garlic powder (more to taste)
  • 1/2 teaspoon salt (more to taste)
  • Black pepper (more to taste)

Instructions

  1. Prepare the Vegetables and Chickpeas: Drain and rinse the can of chickpeas thoroughly to remove excess sodium and preserve freshness. Dice the cucumbers and cherry tomatoes into bite-sized pieces, and finely chop the red onion along with fresh parsley and dill for maximum flavor.
  2. Combine Salad Ingredients: In a medium-sized bowl, add the diced cucumbers, cherry tomatoes, red onion, fresh parsley, dill, and the rinsed chickpeas. Gently toss the ingredients to mix them evenly before adding the dressing.
  3. Make and Add Dressing: Drizzle the extra virgin olive oil, white wine vinegar, lemon juice, garlic powder, salt, and black pepper over the combined salad ingredients. Toss thoroughly to coat everything well with the tangy and aromatic dressing.
  4. Add Feta and Final Toss: Sprinkle the crumbled feta cheese on top of the dressed salad. Gently toss again to distribute the cheese without breaking it down too much, ensuring a balanced flavor throughout.

Notes

  • This salad is best served fresh but can be refrigerated for up to 2 days in an airtight container.
  • You can substitute feta cheese with a vegan cheese alternative to make it vegan-friendly.
  • Adjust garlic powder, salt, and pepper according to your taste preference.
  • Adding a handful of toasted pine nuts or walnuts can add a delightful crunch.
  • Use apple cider vinegar if you prefer a sweeter, milder dressing flavor.
