Ingredients

Scale

Vinaigrette:

  • 1 garlic clove, minced
  • Juice of 1 small lemon (about 2 tablespoons)
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • Black pepper, to taste

Salad:

  • 2 (15-ounce) cans white beans, rinsed and drained
  • 2 Persian cucumbers, thinly sliced (or 1/2 a large cucumber)
  • 57 radishes, cut into matchsticks
  • 0.75 oz fresh dill, stems removed and finely chopped
  • 2 green onions, green and white parts thinly sliced

Instructions

  1. Make the Vinaigrette: In a small bowl, combine minced garlic, lemon juice, olive oil, Dijon mustard, salt, and pepper. Whisk well and set aside for 5 minutes to mellow the garlic flavor.
  2. Make the Salad: In a large bowl, combine white beans, cucumbers, radishes, dill, and green onions. Add the vinaigrette and mix well until evenly coated. Season with salt and pepper to taste.
  3. Serve: Enjoy immediately or refrigerate for 15 to 30 minutes to enhance flavors. Leftovers can be stored in the fridge for up to 5 days.
