Seasonings and Garnish:

  • 2 Tbsp olive oil
  • 1 Tbsp honey (for keto version, use monk fruit sweetener)
  • 1 lemon, juiced
  • 6 garlic cloves, finely chopped
  • 1 Tbsp fresh oregano, chopped
  • 1 Tbsp fresh parsley, chopped
  • 1 Tbsp fresh thyme
  • 1/2 tsp black pepper
  • 1/4 tsp salt

Instructions

  1. Sear the Chicken: Heat oil in a skillet, season chicken thighs and sear for 5 minutes per side. Transfer to slow cooker.
  2. Prepare Vegetables: Arrange red pepper, olives, and onion around the chicken in the slow cooker.
  3. Mix Seasonings: In a bowl, combine olive oil, honey, lemon juice, garlic, oregano, parsley, thyme, salt, and pepper. Pour over the chicken.
  4. Cook: Cover and cook on high for 3-4 hours or low for 6-8 hours until chicken reaches 185°F.
