Instructions
- Prepare meats: Cook the bacon until crisp and crumble it. Dice the cooked chicken into bite-size pieces if not already done.
- Preheat oven and prep dish: Preheat the oven to 350ºF. Lightly spray a 9×13 inch casserole dish with cooking spray.
- Make the cheese mixture: In a large bowl, combine the cream of chicken soup, sour cream, cream cheese, 1 cup of shredded Colby jack cheese, garlic powder, salt, and black pepper. Mix well until smooth and creamy.
- Add vegetables and meats: Stir the mixed vegetables, diced chicken, chopped green onions, and all but 1/2 cup of the bacon crumbles into the cheese mixture until evenly combined.
- Assemble casserole and bake: Spread the chicken mixture evenly into the prepared casserole dish. Top the mixture with the frozen tater tots in a single layer. Bake for 45 minutes or until the tater tots are golden brown and crispy.
- Add final toppings and finish baking: Remove the casserole from the oven. Sprinkle the remaining 1/2 cup of shredded cheese and the remaining 1/2 cup of bacon crumbles on top. Return to the oven and bake for an additional 5 minutes or until the cheese is melted and bubbly.
- Serve: Allow the casserole to cool slightly, then serve immediately for best taste.
