Ingredients

Meats

  • 1 pound bacon cooked and crumbled
  • 1 pound cooked chicken, diced into bite-size pieces

Dairy and Sauces

  • 10.5 ounces cream of chicken soup (1 can)
  • ½ cup sour cream
  • 8 ounces cream cheese, room temperature
  • 1 ½ cups shredded Colby jack cheese, divided

Vegetables and Seasonings

  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup mixed vegetables, drained
  • ¼ cup chopped green onions

Other

  • 32 ounces frozen tater tots

Instructions

  1. Cook the bacon until crisp and crumble it. Dice the cooked chicken into bite-size pieces if not already done.
  2. Preheat the oven to 350ºF. Lightly spray a 9×13 inch casserole dish with cooking spray.
  3. In a large bowl, combine the cream of chicken soup, sour cream, cream cheese, 1 cup of shredded Colby jack cheese, garlic powder, salt, and black pepper. Mix well until smooth and creamy.
  4. Stir the mixed vegetables, diced chicken, chopped green onions, and all but ½ cup of the bacon crumbles into the cheese mixture until evenly combined.
  5. Spread the chicken mixture evenly into the prepared casserole dish. Top the mixture with the frozen tater tots in a single layer. Bake for 45 minutes or until the tater tots are golden brown and crispy.
  6. Remove the casserole from the oven. Sprinkle the remaining ½ cup of shredded cheese and the remaining ½ cup of bacon crumbles on top. Return to the oven and bake for an additional 5 minutes or until the cheese is melted and bubbly.
  7. Allow the casserole to cool slightly, then serve immediately for best taste.
