These Cauldron Cupcakes are a fun and spooky treat perfect for Halloween or any festive occasion. Chocolate cupcakes are baked and then filled with lime-flavored jelly, topped with sour worm lollies and licorice straps to create an eye-catching cauldron effect that families and kids will love.

Cupcake Batter

  • 370g packet chocolate cake mix

Jelly & Toppings

  • 85g packet lime flavoured jelly crystals
  • 180g packet sour worm lollies
  • 12 x 12cm lengths licorice strap

Instructions

  1. Preheat Oven and Prepare Tin: Preheat the oven to 180°C (160°C fan-forced). Line a 12-hole muffin pan (1/3 cup capacity each) with paper cases to ensure the cupcakes do not stick and bake evenly.
  2. Make and Bake Cupcakes: Prepare the chocolate cake batter according to the packet instructions. Evenly spoon the batter into the paper cases. Bake for 18 to 20 minutes, or until a skewer inserted into the center of a cupcake comes out clean. Let the cupcakes stand in the pan for 5 minutes before transferring them to a wire rack to cool completely.
  3. Prepare Jelly: Meanwhile, prepare the lime jelly as per the packet directions. Pour the jelly mixture into a medium heatproof bowl and refrigerate for about 45 minutes or until it is almost set but still pourable.
  4. Hollow Cupcakes and Fill: Using a small knife, carefully cut a 1cm deep circle from the top of each cooled cupcake, leaving a 1cm border around the edge. Using a small spoon, scoop out the center to create a hole approximately 3cm deep.
  5. Fill with Jelly and Decorate: Spoon the almost-set jelly into each cupcake hole. While the jelly is soft, poke sour worm lollies into the jelly to look like bubbling cauldron contents. Insert one piece of licorice strap into each jelly-filled cupcake to serve as a cauldron handle. Serve once the jelly has fully set to enjoy the spooky effect.

Notes

  • Ensure the cupcakes are completely cool before hollowing out to prevent crumbling.
  • The jelly should be almost set but not fully hardened to allow easy filling and the candy to stick.
  • You can use different flavors or colors of jelly for a variety of effects.
