Roasted Garlic:
1 head garlic
Splash of oil
Mashed Potatoes:
2–2 1/2lbs potatoes, peeled and cut into chunks
5 tablespoons unsalted butter, cubed
3 tablespoons cream cheese
1/2cup hot milk
Salt and pepper to taste
Instructions
Roast the Garlic: Preheat oven to 400°F. Cut off the top of the garlic head, drizzle with oil, wrap in foil, and roast for 25-30 minutes. Squeeze out roasted cloves.
Cook Potatoes: Boil potato chunks in salted water until tender, about 25-30 minutes.
Brown the Butter: Melt butter in a saucepan over medium heat until browned and fragrant.
Mash the Potatoes: Drain cooked potatoes, return to pot, add roasted garlic, browned butter, salt, and pepper. Mash to desired consistency.
Finish the Dish: Add cream cheese, hot milk, and season. Serve warm with optional toppings.
