Ingredients

Puff Pastry

  • 1 sheet puff pastry

Almond Filling

  • ¼ cup butter softened
  • ⅓ cup sugar
  • ½ cup almond flour
  • 1 egg yolk
  • ¼ teaspoon almond extract

Egg Wash

  • 1 egg white
  • 1 teaspoon water

Topping

  • ¼ cup sliced almonds
  • powdered sugar for dusting

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper to prevent sticking.
  2. Remove the puff pastry sheet from the freezer and let it thaw slightly on the counter while preparing the almond filling.
  3. In a mixing bowl, combine the softened butter, sugar, almond flour, egg yolk, and almond extract until smooth and well mixed.
  4. Spoon the almond filling into a resealable plastic baggie, seal it tightly, and set aside.
  5. Place the thawed puff pastry sheet on a clean surface and unfold it into a square.
  6. Cut the pastry square horizontally and vertically into 9 even smaller squares, then transfer them onto the prepared baking sheet.
  7. Using a small sharp knife, lightly score a square inside each pastry square about 1 centimeter from the edges to create a border without cutting all the way through.
  8. Snip one corner of the baggie and carefully squeeze the almond filling into the center area of each pastry square inside the scored border.
  9. Whisk together the egg white and water, then brush this mixture onto the outer borders of each puff pastry square to promote browning.
  10. Sprinkle sliced almonds evenly over the top of each filled pastry for texture and flavor.
  11. Bake in the preheated oven for 15 minutes or until the pastries are puffed up, golden brown, and crisp.
  12. Remove from the oven and allow to cool slightly before dusting generously with powdered sugar.
  13. Enjoy the almond puff pastries warm or at room temperature for the best experience.

Notes

  • Store pastries at room temperature in an airtight container for up to 3 days.
  • Reheat in the microwave, toaster oven, or regular oven until warm and crisp to refresh texture.
  • You can freeze the puff pastries either before baking or after cooling for convenient make-ahead treats.
  • Be careful when scoring the pastry to avoid cutting completely through; this helps the edges rise nicely.
  • Ensure the puff pastry is cold but pliable for easier cutting and shaping.
