1/2cup gluten-free breadcrumbs
1 egg, whisked
1/2 tsp sea salt
1/4 tsp Italian seasoning
1/4 tsp paprika
1/2 tsp garlic powder
1/2 tsp onion powder
For the Salad:
4cups romaine lettuce
1/2cup tomatoes
1/2cup cucumber
1/2 avocado
1/3cup red onion, slivered
For the Honey Mustard:
3 tbsp dijon mustard
1/2 tsp whole grain dijon
3 tbsp honey
1 tsp apple cider vinegar
dash of sea salt
Instructions
Prepare the Chicken: Mix breadcrumbs with seasonings. Whisk egg in a separate bowl. Coat chicken tenders with egg and breadcrumb mixture.
Cook the Chicken: Air fry at 350°F for 14 minutes, flipping halfway through.
Prepare the Salad: Combine romaine lettuce, cucumber, tomatoes, red onion, and avocado.
Make the Honey Mustard: Mix mustard, honey, vinegar, and salt in a bowl.
